Halloween Pie

To me, cooler weather not only means cute boots & scarves, it means pie. Lots of pie. Last year I made the most dang-amazing S'mores Pie. So here's another take on that, but with a pumpkiny twist:
Halloween Pie
  • Graham cracker crust (I suppose you could make your own... but the store bought kind works great)
  • 1 cup pumpkin puree
  • 1 10-ounce bag mini marshmallows (did you know its mAllows not mEllows?)
  • 2 teaspoons pumpkin spice (in the spice section there really is such a thing - but just cinnamon would work too)
  • 1 cup heavy cream
  • 1/3 cup heavy cream
  • 3/4 cup mini chocolate chips
  1. In a medium saucepan, melt over medium heat pumpkin puree, marshmallows, & pumpkin spice (until the marshmallows are completely melted and its all smooth - careful not to let it burn!) Then put it in the fridge and let it cool for about an hour.
  2. While the pumpkin mixture is cooling, melt the chocolate chips & 1/3 cup of heavy cream in the microwave (heat it for about 15 secs a time, constantly stirring) Pour the chocolate mixture (called ganache) into the bottom of the pie crust & let cool in the fridge.
  3. Once the pumpkin mixture is cool, mix it up real good so its slightly fluffy. Using a mixer, whip the 1 cup of heavy cream until it forms stiff peaks (whipped cream!). Then gently fold the cream into the pumpkin mixture - don't over mix it, just gently blend it together.
  4. Spoon the pie filling into the pie crust on top of the chocolate ganache and let it set for a couple of hours.

Viola! All done! You could get really creative, like make a jack-o-lantern face with chocolate chips or put another layer of ganache on top of the pumpkin filling... Or you could just eat it for breakfast like I did.

I'm doing it!

I’m a horrible blogger, I know. Its funny because I plan everything in my life – but when it comes to planning blog posts I feel like it’s a chore! Today I’m feeling inspired though so today you get a post.
This is it. This is the week that changes the rest of my life. This week I got serious about exercising and losing weight. I’ve got 6 months until I marry the man of my dreams and I plan on being the hottest wife ever – so I am officially officially on the exercise train.
Monday I did my first Crossfit class! Ouch!!! But not quite as bad as I had anticipated.
Tuesday I did my weight training and 40 min of cardio. And I like really pushed myself! Typically I kind of half-heartedly walk on the treadmill – no siree, I raced my way up that fake hill on that elliptical!
Wednesday was my day off but I still ate healthy & low calorie.
Today I have my Abripper class and tomorrow I start my Body by Vi shakes! I even downloaded this awesome app called Water Your Body. It tells me how much water I need today based on my weight and it grades me at the end of the day – and because we all know that I’m an overachiever, I need to get an A.
And to prove JUST how dedicated I am this time, here is a picture of me at my fatest for the entire internet to see!

5 on Friday & #Backthatazzup


I'm back again, two days in a row?? Impressed right?
1. Guess what M.E. did yesterday? He finished the toilet. Yeah, he's pretty much the best fiance ever, check it out.


2. Guess what I made for dinner last night? Mexican shells and they were deliciously fattening. Check out the recipe here (I made beans and rice to go with.)

3. Guess what Mama and I are doing tomorrow? Picking up my wedding dress! Yup it was delivered super duper early to the Bridal Shop and now its time to take home! And by home I mean my parent's house because I don't want M.E. accidently peaking!

4. Getting a new roof today lalalaaaaa.

5. Next week is a 3 day week with a 4 day weekend! WHAT? So excited. Go America go!

Weekend Recap with Wings!

Happy Monday you guys!

I hope everyone had a fantastic weekend! Mine consisted mostly of eating junk food and sporting events and only a couple of productive activities (laundry & taxes). And it was fabulous.

Saturday Boyfriend and I went to the FSU basketball game, and even though the Noles lost, we had great seats and had a fun time just being together. After the game we met up with friends at the dirtiest smelliest bar in town to play darts and drink cheap beer, and again, it was fabulous. Especially picking up pizza on the way home.

Yesterday was a lazy-recover-from-the-night-before and prepare for the Super bowl kind of day! Lots of naps and tv watching. The highlight I would say is my attempt at making buffalo chicken wings, which earned my title of MVP of the Super bowl from Boyfriend. Turns out they were the best wings he’s ever had!

MVP Super Bowl Wangs
Ingredients:
Buffalo sauce:
1 tablespoon unsalted butter, melted
1/4 teaspoon cayenne pepper
1/4 teaspoon freshly ground black pepper
1/4 teaspoon kosher salt
1/4 cup hot pepper sauce (such as Frank's)

Wings:
2.5 pounds chicken wings, tips removed (so gross removing tips! But you have to or they’ll burn)
2 tablespoons vegetable oil
1 tablespoon kosher salt
1/2 teaspoon freshly ground black pepper
add ingredients to shopping list

Directions:
For buffalo sauce:
Mix first 4 ingredients in a medium bowl; let stand for 5 minutes. Whisk in hot sauce; keep warm. DO AHEAD: Can be made 1 week ahead. Let cool completely; cover and chill. Rewarm before using.

For wings:
Preheat oven to 400°F. Line rimmed baking sheet and set a wire rack inside. Place all ingredients in a large bowl; toss to coat. Spread out wings in a single layer.

Bake wings until cooked through and skin is crispy, 45-50 minutes, flipping once halfway through.

Toss wings in Buffalo sauce. Serve immediately.
