Engagement Story

In reference to my previous post - it went like this… A couple of months ago we just happened to find super cheap tickets to fly to NY for a long weekend, and it worked out perfectly that it was also our one year anniversary. Mark’s long time friend and his fiancĂ© (Danny & Christi) were gracious enough to let us stay with them in their apartment, and for Christmas Mark reserved a hotel room for one night uptown (under the guise of “it’s close to where the Today Show is filmed).
Thursday it looked as if all plans were off though, the blizzard, Nemo was heading straight for NY and almost all flights were cancelled. I wasn’t letting anyone or anything stop me from this vacation though and we switched our cancelled flight to a very early one the very next day. We drove all through the night to get to the airport on time and made it to NY before the blizzard hit. Unfortunately for Christi who was traveling home from a work trip, her plane was delayed a day. Fortunately for Mark, this was his excuse to move our hotel reservation from Sunday night to Saturday because “Christi would be tired from traveling.”
So Saturday Mark and I took a taxi uptown and arrived at our hotel. Checking in we were upgraded to a suite – in my mind it’s because the hotel was empty because of the storm (but really it’s because Mark wanted to propose Saturday night, our one year anniversary). This wasn’t just a suite, this was the penthouse, and it was fancy. After exploring our rooms and our two balconies, I needed a nap badly but Mark was insistent that it had to be quick because he was “so excited to go ice skating.”
After our nap we walked to Rockefeller Center and bought our tickets for the skating rink and to go up to the “top of the Rock” (the top floor of the Rockefeller building). I just could not figure out why Mark wanted to go to the Rock immediately and was also so excited to ice skate when it was because of my bucket list that we were there. Anyway, after convincing him that we could do a little shopping first we went wobbling out onto the ice. We did a couple of laps, Mark basically skating circles around me, when we came up to the Prometheus statue again where a couple was attempting to take a picture of themselves. I told Mark I was going to offer to take their picture so that they would take ours. I took their picture, wobbling around on my skates, and Mark handed his iPhone to the guy.
We stood there forever, and I even said under my breath, how many photos is he taking? I felt Mark shifting next to me so I turned to check on him, and he had turned to face me. I’m not going to lie, this whole next part was a blur because I was in such shock. (Happy shock!) He said “I have something to ask you. You know I love you right?” and he knelt down on his knee. “Will you marry me?” and he opened the ring box. My brain was reeling and my heart was jumping out of my chest and I felt myself laughing and crying and wanted to kiss him and jump on him and scream YES and scream OH MY GOD all at once. It was the most wonderful feeling in all of the world and I was ecstatic and surprised and just overwhelmed with happiness and love.
As we were kissing and hugging and laughing the rest of the world came back into focus and strangers from all around were congratulating us and cheering. The guy that Mark had asked to take pictures had done a wonderful job and gotten the entire thing documented. We skated around the rink one more time before I asked if we could get off that slippery rink so I could call my mother and my friends.
The rest of the night was so epically fantastic. We went to the top of the Rock, went to a fantastic dinner with free champagne and fancy desserts, and I could hardly sleep afterwards - I kept waking up to watch my ring sparkle in the light from the alarm clock.
I just love Mark so much and I can’t even express how happy I am that he wants to spend the rest of his life with me. I feel like the luckiest girl in the world.

Weekend Recap with Wings!

Happy Monday you guys!

I hope everyone had a fantastic weekend! Mine consisted mostly of eating junk food and sporting events and only a couple of productive activities (laundry & taxes). And it was fabulous.

Saturday Boyfriend and I went to the FSU basketball game, and even though the Noles lost, we had great seats and had a fun time just being together. After the game we met up with friends at the dirtiest smelliest bar in town to play darts and drink cheap beer, and again, it was fabulous. Especially picking up pizza on the way home.

Yesterday was a lazy-recover-from-the-night-before and prepare for the Super bowl kind of day! Lots of naps and tv watching. The highlight I would say is my attempt at making buffalo chicken wings, which earned my title of MVP of the Super bowl from Boyfriend. Turns out they were the best wings he’s ever had!

MVP Super Bowl Wangs
Ingredients:
Buffalo sauce:
1 tablespoon unsalted butter, melted
1/4 teaspoon cayenne pepper
1/4 teaspoon freshly ground black pepper
1/4 teaspoon kosher salt
1/4 cup hot pepper sauce (such as Frank's)

Wings:
2.5 pounds chicken wings, tips removed (so gross removing tips! But you have to or they’ll burn)
2 tablespoons vegetable oil
1 tablespoon kosher salt
1/2 teaspoon freshly ground black pepper
add ingredients to shopping list

Directions:
For buffalo sauce:
Mix first 4 ingredients in a medium bowl; let stand for 5 minutes. Whisk in hot sauce; keep warm. DO AHEAD: Can be made 1 week ahead. Let cool completely; cover and chill. Rewarm before using.

For wings:
Preheat oven to 400°F. Line rimmed baking sheet and set a wire rack inside. Place all ingredients in a large bowl; toss to coat. Spread out wings in a single layer.

Bake wings until cooked through and skin is crispy, 45-50 minutes, flipping once halfway through.

Toss wings in Buffalo sauce. Serve immediately.

Dear February 2013,

Welcome. First off, I’d like to apologize for the way I always butcher your name the first time I try to type it, I’m sure we’re both thankful for spell check.

February, I have high expectations of you! Starting with Ground Hogs Day: I would like Spring please. Also, Valentine’s Day: I would like a romantic night with my sweetie please. And regarding our New York trip: Let’s have a fantastic time and travel safely.

I get an odd thrill everytime I flip a month on my shoe calendar...
During your stay, I have a few things I would like to accomplish:
  • Loose 5 lbs. Boyfriend and I will be eating healthy and working out. It’s not going to be fun, let’s face it. But it will be worth it!
  • Finish the downstairs bathroom. Because its embarrassing when guests come over and I can’t let them use the restroom…
  • Read 4 new books.
  • Attend more of Boyfriend’s basketball games – because I am his #1 fan.
  • Take Bozo on more walks. Let’s test the theory that more walks = less bad dog when we leave him home alone.

Feeling Handicapped and Very Loved

All thanks to Boyfriend, being such a strict doctor this weekend and insisting I lay down and rest. Yup, Dr. Boyfriend in the house. Because remember on Friday when I wrote a letter to the pinched nerve in my back? Well, Friday evening it was driving me batty. That night was horrible, every time I tried to rollover it was like a knife digging under my left shoulder blade. So Saturday morning, because I could barely sit up to get out of bed - off to urgent care we went.

And I was diagnosed with a sprained shoudler blade.
You read right. A sprained shoulder blade.
Who does that?? How do you do that?? Beats me!
 The doc said I must have been doing something repetitively and my left side (my weaker side) said "To heck with it!" and officially gave out. So he gave me lots of meds and told me not to move it as best I can.

Well.... Saturday afternoon, a partner of the firm was throwing a Celebration of Life for his mother who recently passed. It was such a beautiful day and I had been looking forward to it all week so I convinced Boyfriend that I would be ok if we went for only an hour or so.
 I threw on a party dress and off to the Celebration at the park we went. We got there as the speeches were beginning and I was feelin' good with my drugs...

But about 15 minutes later things got weird. Everything got blurry, I got all clamy, and I just had to sit down immediately. I found a chair and it was a total of 5 seconds before I had a panicky feeling and had to get away from the crowd. I asked Boyfriend to take me to the truck because something was wrong. I didn't think I was going to make it though so we found a bench in a garden behind the house and the out of sight of the crowd before I lost it and got sick.
Maybe a little TMI? Maybe. But lesson learned, if the drugs say "will make you drowsy" and "take with food", do it.

After that little incident Boyfriend's gotten bossy and has been taking very good care of me. Forcing food at me and letting me watch all the TLC I want. The roles were really reversed since 2 weeks ago when he was the invalid sick one. And I'm loving it. We've really learned a lot about each other and it makes me so happy. In sickness and in health right?
Tonight, while we're watching the Discovery Channel special on the giant squid, he's grilling me steak and we've got oreo pie for dessert. That's love people, that makes me a Happy Bean.

Dear boyfriend: I’m glad you’re feeling better. You’re my best friend and I love our date nights, pillow talks, and just being near you. Lovin' you is fun.

If I were a boy, I would...


...never wear a shirt.

...always open doors for ladies.

...buy the ladies in my life flowers often and for no reason.

...be a grill master!

...be a sports fanatic.

...drink a beer with every meal and be a burger conessiour and write a man blog about it.

...probably dress just like Boyfriend because he has great man style.

...call my mother every day.

...pee outside all the time.

My feet would never hurt because I’d always be wearing flats.

...make sure to constantly be appreciative of the women in my life cooking, cleaning, shopping for me.

...plan the best engagement proposal ever and it would be an internet senstation and be on the Today Show and/or the Ellen Show.

...wear funny boxers all the time.

...wake up 15 min before work, because I wouldn’t have to straighten my hair, shave my legs, apply makeup, etc.

...complete my honey-do list before being asked and enjoy each and every task.

...I would hate it. Because I very much like being a girl.

The Today Show – every morning! A little bit of news, a little bit of weather, a little bit of “what’s trending.”

Pizza – specifically: pepperoni with pineapple.

Getting things in the mail – presents for others, presents for myself. I will order things just because I know I’ll forget about it and be surprised when the mailman delivers.

Lists – they make me feel productive.

Shopping with my Ma – she’s my best good friend.

Watching shows with my sweetie – on the couch: The New Normal, American Horror Story, the Big Bang Theory, the Cosby Show, and even ESPN occasionally

Wine & cheese – cheap wine & fancy cheese.

A clean kitchen – nothing beats walking into the kitchen without a dirty dish/counter in sight. It truly makes me happy.

Boots.

Pinterest – which is like a never ending list with pictures.

Monograms – can’t have enough! Need monogrammed tanks for the summer!

Bo greetings – coming home to a massive beast leaping around and kissing the air just because he loves you.

New York!

I can just hardly stand my excitment that in 23 days Boyfriend and I will be on a jet plane to NYC!!

It was just fate I think that we found round trip tickets for $100 each on our one year anniversary. And luck that Boyfriend's good friends Mr. & Mrs. Nav live in Greenwich. Its going to be an amazing weekend!!

We've both been to NY before, sperately. For my 22nd birthday, my Ma & Mimi & I visited in the middle of the summer.

Alas, tanner & skinnier in 2010... It was an amazing trip. We did all the touristy things and literally shopped til we dropped.

  • eat a Ruben at a real NY deli
  • 9/11 Memorial
  • The Arch (Grand Army Plaza @ Prospect Park)
  • Ice skating in Rockefellar Center
  • the Today Show
  • a Nets Basketball game

My Old Man

Everyone’s got their aches and pains. Some have bad knees, some get migranes. Well Boyfriend’s got a bad back.
He’s hurt it a couple times over the years (being such a studly athletic and all) but nothing some rest and ice couldn’t fix.
Not this time though!
Friday night something got yanked/pulled during his basketball game and it was all shot from there. After work Saturday morning he was useless. And Sunday morning he was in so much pain I was done with watching him suffer! So I dragged slowly to the ER for a fun day of waiting and sitting and slowly moving around the waiting room for meds and doctors with his parents. My heart hurt to see him wobble around and tell the nurses he was in "8 out of 10" pain!! Finally he got an IV with the good stuff and a prescription for some more relief.
So he’s on the mend, able to sit down and get up without too much assistance.
Now he’s just bored and frustrated about being basically couch and bedridden except for the multiple trips to the chiropractor. Let’s all keep our fingers and toes crossed that Mr. Chiro will fix up Boyfriend quick!!
In the meantime, anyone have any good date ideas that I can use to keep Boyfriend’s spirits up? We’ve rented just about every movie at the redbox… and watching regular ol’ tv is just getting old… Help!!

Weekend Recap - it's beginning to feel a lot like Christmas!

Here's a little weekend recap according to my iPhone!

I made my first pie - a S'mores pie!

After digging through my jewelry box, I found my Ma's high school class ring - it's now rocking right next to my Daddy's ring! 1982 & 1970 :)
 
Boyfriend treated me to some Nuberri - and his looked like alien ice cream. We really do have very different sweet tooths.

Our beautiful tree! Thanks to Boyfriend's meticulous arrangement of the ornaments and ducktaping the treetopper so it stays exactly where I want it...

  • Daddy's Birthday Dinner @ Chili's! Where I thought I was going to die when I ordered of the 'skinny' menu when all I really wanted was a bite of Boyfriend's burger & fries... But surprisingly, my chicken was quite tasty!
  • Some Christmas shopping and a stop in the Beauty Supply store for some new nailpolish - pics tomorrow!
  • Mexican Christmas with our friends Jude, Steph, & Ross - Feliz Navidad at the local tequila watering hole!

Dear Cheesy Stuffing Chicken,

Yesterday, in honor of it being the first day of Novemeber, I wanted to make somthing that tasted Thanksgiving-y. Boyfriend gave it 2 thumbs up and asked that it be put on the meal rotation. Done! Its so easy and so delicious!

Crockpot Cheesy Stuffing Chicken

Ingrediants
3 boneless/skinless chicken breasts (next time we were thinking turkey breasts!)
4 slices swiss cheese
1 can of cream of mushroom soup
1/4 cup milk
2 cups of chicken flavored stuffing mix
1/2 cup of butter/margine melted

Directions
  1. Lightly grease/spray the inside of your crock pot
  2. Place chicken breast in crockpot & top with cheese
  3. Combine soup and milk, stirring it up well, and pour/spoon over cheese.
  4. Sprinkle it all with stuff mix.
  5. Drizzle melted butter over stuffing mix.
  6. Cover and cook on low 8-10 hours or high 4-6 hours.
  7. Chow down.

Dear new fat jeans: I love you even if you are fat. I’ve decided to accept the fact that I will never be my high school skinny again and to start dressing in pants that actually fit and are comfortable – thus making me look less fat?
Dear boyfriend: Thanks for being so great, so sweet, so loving, and so fun all the time. You’re the best. For reals. I love you more than pizza.
Dear house: Please vacuum and empty the dishwasher before we get home tonight so we can relax and catch up on American Horror Story.
Dear Nicholas Sparks: Thank you for writing Safe Haven – now this movie. Can’t wait to see it! And the soundtrack sounds amazing!
Dear Weather: Its officially time to get chilly. Please do so.
